Put the graham dough in a chilled mold, flatten and cool in the refrigerator for 4 hours (Cooling makes the rare cheese stable and easy to remove from the mold) 6. Press a wet warm towel against the side of the mold and melt the rare cheese on the side slightly with heat. Remove the rare cheesecake from the mold and use a pallet knife for the bottom.
