**Southern Style Mac & Cheese** **How to Make Macaroni and Cheese – Easy Recipe** **Ingredients:** - 2 cubes of chicken-flavored bouillon - 1 (16 oz) box of elbow macaroni - 1 stick of salted butter - 3 tablespoons of all-purpose flour - Whole milk - 8 oz Velveeta cheese (chopped) - 1 block of Colby Jack cheese (shredded) - 1 block of medium cheddar cheese (shredded) - 1 (8 oz) bag of four-cheese Mexican blend - Sour cream - Salt - Black pepper - Cayenne pepper - Paprika - Garlic powder - Onion powder - Badia Complete seasoning (available at Walmart, Target, Publix, and Amazon) **Nonstick spray or butter for greasing** **Instructions:** **Step 1: Preheat the Oven** - Preheat your oven to 350°F (175°C). **Cooking the Pasta:** 1. bring 12 cups of water to a boil in a large pot and add the 2 cubes of chicken-flavored bouillon. 2. Once the water is boiling, add the 16 oz box of elbow macaroni, stirring while adding. 3. Cook the pasta according to the package directions. 4. Once the pasta is cooked, drain it and transfer it to a separate bowl (do not rinse). Add 2 tablespoons of salted butter to prevent sticking. Set aside. **Making the Roux:** 1. In a pot over medium-high heat (6/7), melt 4 tablespoons of salted butter. 2. Once the butter is melted, add 3 tablespoons of all-purpose flour and cook for about 4 minutes. 3. Gradually add 2 cups of whole milk, bringing it to a simmer. 4. Add the chopped Velveeta cheese, a handful of the Colby Jack and medium cheddar cheese, and the entire bag of Mexican cheese. Stir until all the cheeses are melted. 5. Once melted, add the following seasonings: 1 teaspoon of salt, 1/4 teaspoon of black pepper, 1 teaspoon of cayenne pepper, 1 teaspoon of paprika, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, and 2 teaspoons of Badia Complete seasoning. Cook for an additional 2 minutes, then turn off the stove. **Combine:** 1. Mix the cheese sauce into the bowl with the macaroni. 2. Add 2 tablespoons of sour cream and mix again. Slowly incorporate 1/2 cup of whole milk and mix thoroughly, then add 1 tablespoon of Badia Complete seasoning and mix well. **Baking:** 1. Spray a small aluminum tray with nonstick spray or butter. 2. Pour the macaroni and cheese mixture into the tray. 3. Cover the tray with aluminum foil and bake in the oven for 20 minutes. 4. After 20 minutes, remove the foil and stir the macaroni and cheese. 5. Top with the shredded Colby Jack and medium cheddar cheese. Sprinkle some cayenne pepper and paprika on top. 6. Place back in the oven uncovered on the top rack.
